Vietnamese-Style Roasted Pompano
The Florida pompano is a species of marine fish that is considered the tastiest of the species. It also is a valued commercial food fish of the American Atlantic and Gulf coasts.Enjoy!
Ingredients:
2 whole Pompano fish (Jack)
2 stalks Lemongrass, thinly sliced then mince half of it
3 cloves Garlic, peeled and minced
2 fresh red chili peppers, diced
1/2 teaspoon Freshly ground black pepper
2 Tbs Fish sauce
1 tsp Sugar
1 tsp turmeric powder
5 Tbs peanut oil
2 sprigs Fresh cilantro, coarsely chopped
Directions:
Combine the lemongrass, garlic, chilies, black pepper, fish sauce, sugar, half the cilantro, and turmeric powder in a large, flat container. Place the fish on a flat surface and using a sharp knife, score it in 1 inch intervals from the gills to tail on each side, It does not need to look identical to the above picture. Place the fish in the container, making sure to coat it evenly with the marinade mixture and work some of it in the slits. Refrigerate for 1 hour. Preheat the oven to 425 degrees and transfer the fish into a baking dish. Roast uncovered for about 25-30 minutes. Remove the fish from the oven and place it on a serving platter. Garnish with fresh coriander and serve. Bon Appetit!

Very beautifull done. Venturing to the fish-mongers soon to find a few of these. I would love to pan sear them stuffed with crab and a few other goodies, served with a nice spicy chili sauce with jasmine rice.

Must try this recipe I’ve seen this fish a lot recently had no real clue what to do with it wanted to try it I’ll try this recipe ingredients sound good.
