Meatless Monday! Easy Hummus Recipe
Hummus has always been one of my favorite side dishes. This recipe is pretty easy to prepare and delivers big on flavor. Enjoy!
Ingredients:
2 cans of chickpeas, liquid reserved
1/4 cup extra-virgin olive oil, plus oil for drizzling
4 cloves garlic, peeled
1/2 cup tahini with some of its oil
Juice of 1 1/2 lemons, more to taste
1 Tbs ground cumin, plus a sprinkling of paprika for garnish
Chopped fresh parsley leaves for garnish
Salt and freshly ground black pepper to taste
Food processor
Directions:
Add all ingredients except the parsley, olive oil, and paprika in a food processor and pulse into a smooth puree; add the chickpea liquid as needed to maintain consistency. Taste and adjust your seasonings, add to a large bowl then sprinkle with a little paprika, drizzle with olive oil, and garnish with parsley. Serve with pita bread, falafel, or dipping vegetables of your choice. Bon Appetit!
